French cuisine is a style of cooking originating from France, having evolved from centuries of social and political change. Cheese and wine are a major part of the cuisine, playing different roles regionally and nationally with many variations and appellation d'origine contrôlée. French cuisine varies according to the season. In summer, salads and fruit dishes are popular because they are refreshing and produce is inexpensive and abundant. Greengrocers prefer to sell their fruit and vegetables at lower prices if needed, rather than see them rot in the heat. At the end of summer, mushrooms become plentiful and appear in stews throughout France. The hunting season begins in September and runs through February. Game of all kinds is eaten, often in elaborate dishes that celebrate the success of the hunt. Shellfish are at their peak when winter turns to spring, and oysters appear in restaurants in large quantities.

When Alan opened his little Bistro in 1962, his voice was well known to the settlers crowd having been the first radio broadcaster in the Kenya colony from 1952. One of the most popular programs was "Whats Cooking" where he shared his passion in gastronomy, very soon his listeners begged him to taste the real thing rather then drooling over the airwaves. The Bistro was an instant success. It's reputation as the premier restaurant in Nairobi over the years has attracted the custom of many international personalities such as Bing Crosby, Pele, Jacky Kennedy, David Lean, Sydney Pallack, Will Braudt and more recently the current president of the United States Barack Obama, when he last visited Kenya.
